Crispy Tofu Burger with slaw

Crispy tofu with Panko crumb, tangy slaw with a creamy chipotle mayo. Yes please.


Comfort food can be made healthy with little swaps of ingredients. You can still have a nostalgic feeling and indulge in mood-boosting tasty foods. This recipe is my version of the spicy chicken burger and serves 4 making it a great family dinner..







You Will Need:


Batter

  • 1 cup spelt flour

  • 1 tbsp nutritional yeast

  • 1 tsp smoked paprika

  • 1/4 tsp cayenne pepper

  • 1 tbsp chicken style stock

  • 1/3 cup water

  • 3 cups panko crumbs

  • 1/4 cup rice bran oil


Tofu

  • 1 block tofu, sliced into 4

  • 1 tbsp tamari

  • 1 tbsp maple syrup

  • 1/2 lime, juiced

  • 1 tsp paprika


Burger

  • 4 burger rolls

  • 1 cup red cabbage, thinly sliced

  • 1 medium carrot, julienned

  • 1/4 red onion, thinly sliced

  • 1/2 lime juice

Chipotle Mayo

  • 2 tbsp vegan mayonnaise

  • 1 tsp chipotle sauce

  • 1 tsp lime juice


How to Make:


Press the excess liquid from the tofu with a wooden chopping board and a heavy pot with a paper towel.To marinate the tofu, add the tamari, maple syrup, lime juice and paprika in an airtight container stir till combined. Place the tofu in the marinade, making sure the tofu is coated completely. Store in the fridge for more than 20 minutes (the longer you leave it, the more flavoursome the tofu will be).


To make the batter- add flour, nutritional yeast, paprika, cayenne pepper; stir till combined. Add the water and stock. Stir till it becomes a batter.


In a shallow bowl, add the panko crumbs. Place the marinated tofu into the batter and coat the tofu with the panko crumbs.


In a large frying pan on high heat, add the oil and once the oil heats place the battered tofu in the frying pan and let it shallow fry for one minute flipping it over let it fry for another minute then place it on a paper towel.


In a small bowl, add the carrot, cabbage, onion and lime juice and massage with your hands.

Prepare the burger by placing the tofu, on the bottom bun, then the chipotle mayo and slaw. Close the burger.
