Sometimes you just need comfort food and macaroni and cheese is the ultimate comfort food.
You will need:
2 medium potatoes peeled
2 carrots into quarters
1 brown onion chopped
1/2 cup soaked cashews
1 tsp onion powder
1 tsp salt
1 clove garlic crushed
4 tbsp Nutritional yeast
You will need a large saucepan and a high powered blender
How to make:
Boil the potatoes in a shallow water in the pot on medium heat for 2 minutes then add the carrots boil for another 5 minutes, add the chopped onion and boil for another 7 minutes.
Add the potatoes, carrots, onion and broth into the blender then add the soaked cashews, onion powder, salt, nutritional yeast and crushed garlic and blend until a creamy consistency.
Boil the pasta and when al dente drain and mix with sauce.
sprinkle fresh parsley for garnish
