Healthy Banana Pancakes

Healthy Banana Pancakes in bed, I don’t think you can say no!

Most mornings I usually roll myself out of bed and out the door, but today I thought I would treat myself to my favourite recipe and queue Jack Johnson. “making banana pancakes, pretend like it's the weekend”.


These healthy banana pancakes are full of great vitamins like vitamin A, calcium, vitamin D, vitamin b-12, Vitamin C, Magnesium, Vitamin b-6 and protein. 


This plant-based recipe is fluffy and simple to make. I used a hand blender in my video, but today I used my Vitamix. and the batter was smooth.

You will need:

1 Cup Oats

1 Cup Nut Mylk- I prefer Almond, but you can use Oat milk or Soy

1/3 Cup Wholemeal Flour – For the GF friends, Try buckwheat or Spelt

2 Tsp Baking Powder

2 Ripe Bananas 

Pinch of Salt


Toppings that you can use

Bananas Vegan Choc Chips Peanut and Maple How to make: 1. Put all the pancake batter mix in the blender, and blitz until smooth. 2. Lightly grease a frying pan with coconut oil and place over medium heat. Add a small dollop to the pan 3. Cook for 2 minutes until it bubbles, then flip and cook on the other side for 30-40 seconds 4. Remove from the pan and repeat with the remaining batter. 5. Add your toppings and maple syrup. The best compliment to healthy banana pancakes is fruit toppings. Try getting fruit in season, it is more sustainable – I bought strawberries package free at the farmer’s markets; if they come straight from the farmer, you can ask if you can return the plastic for them to reuse and use your own containers.
